Ingredients
- 2 cups cooked chicken, shredded
- 2 cups corn, fresh or frozen
- 1 cup cooked brown rice or quinoa
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1/2 cup cilantro, chopped
- 1 lime, juiced
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Heat olive oil in a pan over medium heat. Add corn and red bell pepper; cook until softened. Season with salt and pepper.
- In a large bowl, combine the cooked chicken, corn mixture, cooked rice or quinoa, and lime juice.
- Serve in bowls topped with sliced avocado and a sprinkle of fresh cilantro.
Notes
