Description

A delightful Southern-inspired bowl combining tender chicken, vibrant vegetables, and hearty grains, perfect for quick weeknight dinners or meal prep.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups corn, fresh or frozen
  • 1 cup cooked brown rice or quinoa
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1/2 cup cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste
  • Olive oil, for cooking


Instructions

  1. Heat olive oil in a pan over medium heat. Add corn and red bell pepper; cook until softened. Season with salt and pepper.
  2. In a large bowl, combine the cooked chicken, corn mixture, cooked rice or quinoa, and lime juice.
  3. Serve in bowls topped with sliced avocado and a sprinkle of fresh cilantro.

Notes
