Description
A comforting and quick meal featuring tender chicken thighs and flavorful rice bathed in a sweet and tangy BBQ sauce.
Ingredients
- 1 lb boneless, skinless chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/2 cup BBQ sauce
- 1/4 cup honey
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 cup mixed vegetables (optional)
- Chopped green onions for garnish
Instructions
- Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
- Heat a skillet over medium heat and sear the chicken for 3โ4 minutes on each side until golden brown. Remove and set aside.
- In a bowl, mix the BBQ sauce, honey, soy sauce, and minced garlic.
- In the same skillet, toast the uncooked rice for 1โ2 minutes, stirring frequently.
- Add the chicken broth and half of the BBQ sauce mixture, stirring to combine.
- Return the chicken to the pan and pour the remaining sauce over the top.
- Cover and let it simmer on low heat for about 15 minutes.
- If adding mixed vegetables, toss them in, cover again, and cook for an additional 5 minutes or until the rice is tender and the chicken is cooked through.
- Allow it to rest for 5 minutes, garnish with chopped green onions, and serve hot.
Notes
Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 3 months.
