Description
Delicious Greek Chicken Bowls featuring marinated chicken, fresh vegetables, and creamy tzatziki, perfect for weeknight dinners.
Ingredients
- 2 Chicken breasts
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- Juice of 1 Lemon
- 2 teaspoons Oregano
- Salt, to taste
- Pepper, to taste
- 1 Cucumber, chopped
- 2 Tomatoes, chopped
- 1 Red onion, chopped
- Feta cheese, crumbled
- 2 cups Brown rice or quinoa
- Tzatziki sauce (made with Greek yogurt, cucumber, garlic, lemon juice, dill)
Instructions
- Marinate the chicken by mixing olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a bowl. Add chicken breasts and let marinate for at least 30 minutes.
- Grill or sauté the chicken until fully cooked and golden brown, about 6-7 minutes per side depending on thickness.
- For the tzatziki sauce, mix Greek yogurt, grated cucumber, minced garlic, lemon juice, and fresh dill until well combined.
- Cook brown rice or quinoa according to package instructions and fluff once it’s done.
- Chop fresh veggies – cucumber, tomatoes, and red onion.
- Assemble the bowls with a base of brown rice or quinoa, sliced chicken, fresh veggies, feta cheese, and tzatziki sauce.
- Serve immediately or prepare for meal prep.
Notes
For added flavor, marinate chicken in the morning and grill it later. Adjust toppings based on preference.
