Description

A fuss-free slow-cooker recipe that combines tender shredded chicken with a sweet-savory teriyaki sauce, perfect for weeknight dinners or potlucks.


Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup teriyaki sauce (store-bought or homemade)
  • 1/2 cup pineapple juice (optional)
  • 1 tablespoon garlic, minced
  • 1 tablespoon ginger, minced (or 1 teaspoon ground ginger)
  • Salt and pepper to taste
  • Cooked rice or noodles for serving
  • Green onions for garnish (optional)


Instructions

  1. Place the chicken breasts in the bottom of the slow cooker.
  2. In a separate bowl, whisk together the teriyaki sauce, pineapple juice, garlic, and ginger.
  3. Pour the sauce over the chicken, making sure it’s well coated.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Once cooked, shred the chicken in the sauce and mix well.
  6. Season with salt and pepper to taste.
  7. Serve over warm rice or noodles and garnish with green onions if desired.

Notes

For a thicker sauce, whisk in cornstarch mixed with water and simmer to thicken. Use frozen chicken for convenience but adjust cooking time accordingly.
