Description

Tender, marinated chicken in crispy wonton wrappers, topped with refreshing coleslaw and drizzled with sweet chili sauce.


Ingredients

  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1/4 cup teriyaki sauce
  • 1 tbsp sesame oil (divided)
  • 1 tbsp low-sodium soy sauce
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 2 cups coleslaw mix (cabbage and carrots)
  • 2 green onions, thinly sliced
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 12 wonton wrappers
  • 2 tbsp sweet chili sauce
  • 1 tsp sesame seeds
  • 2 tbsp chopped cilantro


Instructions

  1. Marinate the chicken with teriyaki sauce, 1/2 tbsp of sesame oil, soy sauce, minced garlic, and ginger for about 10 minutes.
  2. In a skillet over medium heat, cook the chicken until done, about 5-7 minutes, stirring occasionally.
  3. Toss the coleslaw mix, sliced green onions, rice vinegar, honey, and the remaining sesame oil in a bowl until well combined.
  4. In a frying pan, lightly fry the wonton wrappers in oil for 20-30 seconds per side until crispy and golden.
  5. Fill each crispy wonton with the cooked chicken and coleslaw mixture, then drizzle with sweet chili sauce.
  6. Garnish with sesame seeds and chopped cilantro for extra flavor.

Notes

For a vegetarian option, substitute diced tofu for chicken. Store leftovers in an airtight container in the fridge for up to three days.
